Baked Chocolate Oatmeal Donuts.


I love baking. So fun..and I got a mini donut maker last week...so today I decided to make donuts!! Well..healthy ones. I had a taste for chocolate and honey. Every time I make anything that requires flour.. I make oatmeal flour. All I do is grind the oats in my magic bullet. I love it. The donuts I made were a bit bitter because I added too much cocoa, so next time Ill add only half the amount..which is what I will put in the recipe. These are so cute and only take about 25 minutes total. Make sure to get some heart sprinkles for valentines day.

Made 17 mini donuts.

What you need:

*1 cup oatmeal flour (or oats to grind into flour)
*1/2 cup honey
*1/4 cup cocoa powder
*1 tablespoon baking powder
*1 egg
*1/2 cup milk
*4 tablespoons coconut oil
*honey and sprinkles for the topping.

What to do:
1. Grind oats into oatmeal flour.
2. Mix oats with cocoa powder and baking powder.
3. Melt the coconut oil. (about 15 seconds in the microwave)
4. Mix in the coconut oil and mix it in with the honey.

 When you use coconut oil..Do not add it at the same time as any cold ingredients, because it will harden and get clumpy. Then it wont mix well into your batter. That's why I melted and mixed it in before adding the egg and milk.

5. Mix in the egg and milk.
6. Bake according to the donut maker directions.
7. When donuts are cool, drizzle honey and sprinkle the sprinkles.

Yummy Healthy Dessert Smoothie

For a healthy breakfast smoothie that tastes like dessert.

What you need:
1 Cup Spinach
10 almonds
1/4 cup milk
1 tbs cocoa powder
1/4 medium apple
1 dried fig
1 small banana

What to do:
Blend In the food processor until smooth. If you like you can leave some chunks.
This is super yummy.

Quick, Easy Nutella Cups






I love to bake.
but it can be time consuming.
But these Nutella Cups are quick and easy.
AND are perfect to make for your sweetheart
or give to the kid's in their lunchbox.



To make 10, you need:
1 jar (16 oz) nutella, justins chocolate hazelnut butter, or any nut butter/chocolate spread you like
1 pie crust dough (homemade or store bought)
  

What to do::
1. Preheat the oven to 450 (or to what your refrigerated dough box says)
2. Cut 2 inch circles into the pie crust.
3. Butter a cupcake pan and put one circle in each spot.
3. Cut mini hearts into the pie crust (you dont have to do hearts but its cute.)
4. Line a tray with foil and place the mini hearts on it.
5. Bake the hearts for about 5 minutes and the Pie crusts about 10. (until golden brown)
6. Fill the pie crusts with nut butter and top with your pie crust hearts.

No Tang Cheesecake Cups

I made these from Tyler Florence's Ultimate Cheesecake..
just changed a little.

Sometimes Cheesecake is too tangy and I don't like that taste, so I took out the lemon zest and added a little margarine.

Note:: Bring eggs and cream cheese to room temperature before beginning.

You need:


  • 2 (8oz) Cream Cheese Packages
  • 3 eggs
  • 1 cup sugar
  • 1 cup light sour cream
  • 1/4 cup margarine
If you want a crust. (I didn't add one).. 
You will need:
  • 2 cups finely ground graham crackers (about 30 squares)
  • 1/2 teaspoon ground cinnamon
  • 1 stick unsalted butter, melted
What to do:
   For the CRUST:
1. Preheat the oven to 325 F.
2. Combine graham crackers, butter, and cinnamon.
3. Spray your cupcake pan with non stick spray.
4. Press the mix into the bottom of the pan (about 1 inch)
5. Refrigerate 5 minutes.

For the filling:
1. Mix Cream Cheese and sugar until blended.
2. Add eggs one at a time until smooth.
3. Add the sour cream and margarine. Mix Well
4. Spoon  this mix onto the graham cracker crust.
5: Bake about 25 min.

Add sprinkles.
or any topping you like.
Enjoy.

Yummy Cranberry Apple Flax Cake!




You need:



1.5 cups flax meal

1.5 cups white flour
1 cup brown sugar
1/2 tsp salt
2 tsp baking soda
1 tsp baking powder
1/4 cup milk
1/2 cup apple juice
2 flax "eggs" (2 tbsp flax meal in 6 tbsp water)
1 peeled, shredded apple
1/2 cup dried cranberries/craisins
1 tsp vanilla extract

What to do:

1. Preheat your oven to 350
2. Mix flax meal, flour, brown sugar, salt, baking soda and baking powder.
3. After well mixed add flax eggs. Mix.
4. Add milk, apple juice and vanilla. Mix well.
5. Line a pan with aluminum foil or grease your pan. I'm not sure if there will be a time change if you don't use aluminum foil like I did, but pour the batter into your pan and bake 30 minutes.

Sprinkle with powdered sugar and enjoy.

HEALTHY hot chocolate. 3 ingredients!

I LOVE sweets.
So I have to make them healthy
or I will be unhealthy.
You can give this to your kids
and they will love it.
They won't even know the difference.


This will be enough for one serving.


You need:

1/2 cup milk
3/4 medium banana.
1-2 tablespoons cocoa powder. (i used special dark, but you can use any.)

What to do:

1. Slice your banana and heat 30 seconds in the microwave. it will start to melt. if its not steaming, microwave for additional time at 10 second intervals.
2. Mix the banana with a spoon so it completely melts.
3. Warm up the milk about 1 minute and mix in the banana and the cocoa powder.
4. If you dont think its sweet enough, add more melted banana, or honey, agave, etc. but it will be sweet enough.

If you wish, add: marshmallows, sprinkles, peppermint candy sticks, etc (makes it a little less healthy).

Ferrero rocher cupcakes. Yummm.


My love for gianduia [hazelnut chocolate] is a lot.
It's my favorite flavor..
I also love to bake.
It's so fun and cute.
So when I saw Ferrero Rocher cupcakes.
I made them =]
I have actually seen a few of these recipes online..
I made the recipe I found here.
They are so delicious.
This recipe does not use a wafer, but you could add one on top for the crunchy feel
if you'd like..





I have to type the recipe out from the smallest amount of ingredients to the largest, because I like it organized that way.
Also.
I feel it's easier to forget to get the small ingredients at the grocery store..and sometimes even in the recipe.
So to avoid this, you can make a list for the grocery store and be sure to have your ingredients all ready and in the same place before you begin.
Also look over the recipe and see what ingredients can be grouped together and place them that way on your work surface.
I like to put the ingredients away as I use them so I don't skip over anything.
Be sure to set your oven temperature before you begin to give the oven time to heat up.

Ferrero Rocher Cupcakes. [creates.24] 


::You will need::
2 medium bowls.
a large bowl.
a whisk. [i don't have a mixer so i hand mix everything, but if you have a mixer. you can choose to use it.]
cupcake pan and baking cups.
any type of spreader. [spatula, spoon, knife..]
1-2 small pans. [you can wash and use the same one..]
***Preheat Oven to 350F***




::The cupcake::


1/4 tsp.                               Salt.
1/2 tsp.                               Vanilla extract.
1/2 + 1/8 tsp.                    Baking soda.
1 Tbs.                                  Hazelnut extract.
1/4 Cup                              Milk.
1/4 Cup + 2Tbs.                Cocoa Powder
1/4 Cup + 2 Tbs.               Granulated Sugar
1/2 Cup                              Boiling Water.
1/2 Cup                              Softened, unsalted Butter.
1/2 Cup + 2Tbs Tbs.        Dark Brown Sugar.
1 Cup                                  All Purpose Flour.
2                                          Eggs.




In one medium bowl::
Add 6Tbs cocoa powder. Pour the 1/2 cup water over it and whisk until the cocoa powder dissolves. 
Add 1/4 cup milk, 1 Tbs Hazelnut Extract and 1Tbs Vanilla Extract and mix.


In the large bowl::
Beat 1/2 Cup Butter and 1/4 Cup + 2Tbs Sugar until light and fluffy.
Add 2 eggs one at at a time, beating after each addition.


In your other medium bowl::
Sift together 1 Cup Flour, 1/4 + 1/8 tsp Baking soda and 1/8 tsp Salt.


Alternately add the cocoa mixture and the flour mixture.
Mix well after each addition.


Line the cupcake pans with the baking cups.
And fill each wrapper a little more than half way.
Bake at 350F for around 18 minutes.
Stick a tootpick in.
If it comes out clean, they are ready.


***While the cupakes are baking you can make the Filling and Topping.***


::Hazelnut Filling.::


You can use nutella to fill them or you can make this....


2 tsp.   Hazelnut Extract.
1 Cup   Heavy Cream.
1 Cup   Semi Sweet Chocolate Chips.


In a small Pan::
Bring 1 Cup Heavy Cream to a boil.
Stir in 1 Cup Chocolate chips and melt them.
Stir 2 tsp. Hazelnut extract.


When the Cupcakes are cooled cut out a small part of the center.
Fill the hole you have made with the Filling.






::YUM. Chocolate Hazelnut Ganache Topping::
=]


2 tsp.       Hazelnut Extract.
2 Tbs.      Light Corn Syrup.
1/2 Cup   Heavy Whipping Cream
1 Cup       Delicious Semi Sweet Chocolate Chips.


In your other pan::
Bring 1/2 Cup cream to boil.
Add 1 Cup Chocolate chips.
Stir in 2tsp Hazelnut Extract and 2 Tbs Corn Syrup.




Cool and Pour over cupcakes.


You can vary this so many ways.
Add 1/2 cup chopped hazelnuts to the Topping...or sprinkle them on top.
You can even add them in the cupcake.
Maybe add a wafer cookie to the top for decoration 
or put some in the filling or topping.
make it however you like.
